Creepy Eyeball Cupcakes

The foil wrapped chocolate eyeballs from Palmer's look very realistic, but I wanted a completely edible eyeball. I used almond bark to mold chocolate eyes without any wrapping. There are plenty of ways to use these eyes, but these spooky cupcakes are perfect for Halloween.

For mini eyeball cupcakes, attach the chocolate eye with a dab of frosting. (I had already added a blue crumb coat.) Use a petal decorating tip such as Wilton tip 103 to pipe a top and bottom eyelid. If you are good with a spatula (or butterknife) apply the frosting eyelids by hand.









For regular eyeball cupcakes, apply a white crumb coat and attach the chocolate eye. Apply the eyelids leaving the eye a little more open. Try a large petal tip such as Wilton tip 124. Check out this example from snarkygurl on Flickr.

Or frost around the eye to create a spooky cupcake.



This blue cupcake reminds me of Monsters, Inc. An arched eyebrow would boost the creepy factor.
