We're really baking in Texas!

With heat indices topping 100 degrees, it seems like all Texans are baking. Don't worry if your oven retires for the summer. No bake desserts, microwave cooking and tweaking store bought foods are some ways you can still enjoy "baking" at home.

If you are a grilling aficionado, check out this recipe/experiment from fellow Texan Kim Cannon. Memories of her dad's creative cooking and the hot weather inspired her to grill a cake. It sounds like a great idea, but I will have to pass because I do not have a grill. Skip the wood chips if you decide to bake a cake on the grill. Be sure to leave comment letting her know how your cake turns out.

I am working on some no bake desserts that are light enough for our summer weather. Too many of the established recipes taste like flavored whipped cream. The cool flavors of lemon and berries sounds refreshing. Hopefully, I will have a refreshing no bake lemon cheesecake recipe soon. In the meantime, stay hydrated and shop for baked goods in the bakery or grocery freezer section.
