Bacon and Pancakes in a Cookie?



Pancake lovers rejoice! February is full of holidays especially for you. Celebrate National Pancake Week with a delicious frosted pancake cookie. These drop cookies are very easy to make and, unlike real pancakes, the first one turns out as delicious and beautiful as the last.

The maple buttercream recipe creates more than enough to cover a batch of cookies. It is rather tedious to properly mix a smaller batch. Feel free to half the recipe (you will probably need to mix it by hand) or store the extra frosting for future use.


It is easy to customize the toppings for basic pancake cookies. Modify the sweetness by adding a dab of frosting or applying a thin glaze.

Bacon is often a welcome addition to pancake breakfasts. Why not add a little bacon to the pancake cookies? Pan fry a few slices of thick-cut bacon until it is crisp. Drain the bacon on paper towels. Trim away the fat and crumble the bacon by hand.
