6 Simple Tips for Perfect Pancakes

There is an old saying that the first pancake never turns out right. Put that myth to rest and learn to make perfect pancakes at home. There is no magic recipe, but these tips will help you avoid common mistakes and master this delicious breakfast staple.

1. Prepare the Pancake Batter

Whether you prefer light and fluffy or thin, golden pancakes, it is important to handle the batter carefully. Overwork it and you'll have tough, rubbery pancakes. Undermix it and you'll have powdery clumps in the middle of your pancakes. For best results, use a whisk to combine the dry ingredients in a mixing bowl. This will help everything blend with the wet ingredients.

Make a well in the center and set aside. Thoroughly mix the wet ingredients in a separate bowl. Add about a third of the mixture to the dry ingredients. Gently whisk the first addition to make a paste in the middle of the bowl. Gradually add more of the wet ingredients and use a whisk to incorporate the dry ingredients. Whisk just enough to mix everything. It is okay if a few small lumps remain.

2. Use an Electric Griddle or Griddle Pan

A skillet works fine if you're cooking pancakes for one or two, but a large griddle is essential when feeding the whole family or houseguests. The large, flat cooking surface makes it easy to cook several uniform pancakes at the same time. 3. Preheat the Cooking Surface

4. Prep the Cooking Surface
