Cinco de Mayo Dessert: Pastel de Tres Leches

Pastel de tres leches is a popular dessert in Texas. Typically, tres leches cake is made by soaking a dense cake (baked from scratch) in a mixture of three milks and topped with whipped cream and fresh fruit. The result is a rich cake that is soft and moist.

Most people have an idea of exactly what tres leches cake should be, usually "just like Mama's" or "just like Abuela's", but baking from scratch is not always an option. Sorry Martha, but I embrace box cake mixes.

A box cake mix needs to be baked a few minutes longer to make it somewhat dry. Dry cake is generally a bad thing, but the milk will take care of that. Add the milk slowly so it can absorb throughout the cake.

As you may expect, tres leches cake is not especially diet-friendly, but this tres leches cake recipe uses fat-free and low fat milk to reduce the fat content. You can save more time and calories by topping the tres leches cake with fat-free Cool Whip instead of fresh whipped cream.
